Caramel Popcorn

Caramel Popcorn is an old favourite of my family's.  I used to make this up for gifts and for school bake sales, and my kids' school parties.  A great sweet treat for New Year's Eve parties too.

 
Doesn't that look good enough to eat!  Would you like to actually try some of this delectable treat for yourself?

 
Well, here's my recipe ... 

 
CARAMEL POPCORN
 
1 cup unpopped popcorn
 
1 cup butter
2 cups brown sugar, packed
1/2 cup corn syrup
1 tsp salt
 
1 tsp vanilla
1/2 tsp baking soda
 
Pop the popcorn, and have ready in a large roasting pan, or other large oven-proof pan.
 
Combine butter, brown sugar, syrup and salt in a medium saucepan.  Heat on stove over medium heat stirring constantly until mixture begins to boil, .  Once it boils, let it boil for 5 minutes without stirring.
 
Remove from heat and stir in vanilla and baking soda.  Pour this mixture over the popped popcorn, and stir gently with a rubber spatula until the popcorn is somewhat coated.  Don't worry if all popcorn is not coated, because you will be stirring it again.
 
Bake popcorn at 250F for 1 hour, stirring every 15 minutes with a rubber spatula (this keeps the popcorn from crumbling too much).  Be sure to scrape the spatula along the bottom of the pan to get up all the caramel that will pool there.
 
Remove from oven and continue to stir gently with the rubber spatula until the popcorn has cooled.  This will keep the popcorn from sticking together in large clumps.

  3. My kids love caramel corn. It is a treat we always love to get at the beach. We'll have to give this recipe a try over the Christmas holiday ~ my kids will be thrilled if I can recreate their favorite treat!

  4. I'm definitely going to try this recipe! My daughter can't have commercial caramel corn because of it often being made with peanuts or in a facility with peanuts. She's going to be so excited! Thanks!

  8. oh thank you for sharing-we love caramel popcorn. I have made a recipe that uses granola and then you bake it-turns out pretty good too, I also have found an amazing chocolate popcorn that is crunchy like the gourmet kind-all good eats. we have cloudy skies and rain now so can't make my candies til the sun comes up.

  9. You are a saint friend! You have no idea how hard it is for me to find sweet treats for my little man with all of his food allergies. We have yet to try caramel popcorn which happens to be an old past time favorite of mine because most are processed with peanuts. And now you go and post this!!! JACKPOT!!!   13. I love caramel popcorn Wendy- adore it in fact! But corn syrup is not something we can get easily here, we have to order it in especially! Can you imagine that... I have two bottles of the Karo Brand, light corn syrup that I would not like to tell you how much I paid for it! It's such a shame... But I have enough for this recipe... maybe a Christmas eve treat? Hazel x

    When I was a little girl, caramel popcorn was my favourite snack. We don't get corn syrup here on the island, nor can we find this tasty treat already prepared in the supermarket. Do you remember that pink popcorn, which was sold in little cartons, with animals on the packaging, I think? I remember being addicted to that, as well. I think it may have some Scottish roots as I spotted it for sale in a Scottish gift shop in Port Perry last year!

    Your recipe seems easy enough. I will definitely try this next time I visit Toronto!
